LEMON PUDDING CAKE

This pudding is for you, even if you care about your figure. A dessert without complex at less than 150 kcal. Ultra good, a layer of sponge cake on top, and a delicious cream like a smooth lemon curd forms below.


* Ingredients / for 6 people :


° 2 eggs

° 40 g of light butter (St-Hubert 41% for me, margarine possible)

° 30 g of fructose (or 60 g of sugar)

° the fair and zest of a large lemon (or two small)

° 170 ml milk

° 30 g flour

° 104 kcal if fructose, 123 kcal if sugar per serving (based on 6 ramekins)

* PREPERATION :


1 Preheat the oven to 180 ° C and place a bain-marie in it (dish filled with hot water). In a bowl, whisk the egg yolks, sugar and butter until the mixture turns white, add the lemon juice and zest. (a few seconds in the microwave allows you to obtain more juice).

2 Dilute the flour with the milk gradually while stirring and pour into the bowl. Mix well (there are still lumps).

To finish

Beat the whites until stiff and gently incorporate them into the preparation. Pour into ramekins and place them in the double boiler. Leave in the oven for 30 min.
