Marinated Cucumbers, Onions, and Tomatoes

This plain and summery tomato and cucumber salad provides a delightful comparison to the heavy flavors of the side dish. Sauces and seasonings are short, which is why you want to consume more, and cucumbers, onions, and tomatoes have an intense, pleasant crunch.

The taste is more intense due to the juice and pulp of the lemon. It would be delicious as a light lunch option for barbecues, food or side dishes with veggies, or perhaps even better for people who watch their carbohydrate intake during the summer months as they celebrate the big holidays.

Go ahead and make a large amount of this and store it in the refrigerator for later consumption.
